A dynamic wine, the nose shows bright cranberry, dried strawberries, and raspberry preserves. This light-body wine shows balanced acidity and fruit with notes of stone fruit, sangria, and cranberry watermelon making it a perfect summer sipper. It is mouth filling while lingering on the palate. While most rosé wines start to lose some of the characteristics almost immediately, this wine only gets better as it opens up.

10-15% bleeds are preformed once our fruit comes in and put into tank. This technique is called “saignée,” which is French for “bleed” and involves taking the juice before the skins can release color into the juice. This technique helps concentrate the juice to skin ratio on all of our pinot noirs, and the by product is a beautiful pink colored rosé. We halt fermentation halfway through to impede malolactic. This helps retain some of the bright fruit characters such as raspberry, strawberry and Bing cherry. 


Record-breaking winter rainfall kicked off the season, filling the water table to capacity and replenishing soils. A mild spring brought bud break at the normal time, and vintners reported small berries with excellent colorA hot summer culminated in a Labor Day weekend heat wave that caused some vintners to move up their harvest dates by a week or so. The grapes endured the heat and once cooler weather arrived, fruit was able to mature at a gradual pace. Mid-September rain forced growers open up canopies, and in some instances, use blowers to dry out certain varieties prior to harvesting. Early estimates predicted an average yield, but some vintners reported weight loss in the grapes after the heat wave. Because most of the fruit was picked prior to the October fires, vintners have a positive outlook on the 2017 wines, comparing the vintage to 2003, 2013 and 2014. The fruit has excellent color, pronounced flavors and high quality across varieties.


Comprised of three award winning and storied vineyards: Suacci Vineyard is a 6.5-acre vineyard planted on south facing slopes of the Sebastopol Hills in Blucher Valley in Russian River Valley AVA. Manchester Ridge is located in the discontinuous Mendocino Ridge AVA, near the Sonoma County line.  This rugged and diverse location is accessible only by timber flanked logging roads, which climb up to 2058 ft elevation. The award-winning Black Knight Vineyard is scattered across a Santa Rosa Mountain Top with an elevation of 8oo feet and strong marine influences. Due to the steep and complex location, there are at least 20 different microclimates with 7 different clones of Pinot Noir.


Bailarín Cellars was created in 2014 by a collective of family and friends, each following their respective passions. Together we focus on producing small lots of handcrafted wines from unique vineyard sources. We are proud to share the fruits of our labor and love with you.
