About Fleur Savage Chocolates by Chef Robert “Buttercup” Nieto

In December of 2018, Robert realized his long time dream and launched his own chocolate company, Fleur Sauvage Chocolates (Fleur Sauvage means Wild Flower in French). Fleur Sauvage Chocolates makes custom chocolates for local wineries using seasonal ingredients. Fleur Sauvage Chocolates sold at Sonoma County Farmers Markets, Festivals, and special events for the first three years in business. In December of 2021, Robert and his wife, Tara, moved Fleur Sauvage Chocolates into a permanent storefront location (370 Windsor River Rd) in Windsor. Fleur Sauvage Chocolates now has an expanded selection of both chocolate treats as well as Espresso drinks, tea, hot chocolate and small beautiful desserts. The shop offers a friendly and inviting atmosphere for customers to relax and enjoy a sweet treat.


2020 BACIGALUPI CHARDONNAY

The 2020 Bacigalupi Chardonnay begins with aromas of pear, Gravenstein apples, crème brulee, and honeysuckle. The palate showcases light mineral tones, stone fruit, pear, and honeydew melon and our soft oak treatment brings hints of vanilla and butterscotch. This wine will age beautifully for the next 7-10 years.

Fresh orange and local honey with white chocolate ganache

Ingredients:  White Chocolate (Sugar, cacao butter, partially skimmed milk powder, whole milk powder, emulsifier (E322: SOYA Lecithin), Vanilla Extract * Madagascar), Heavy Cream, Orange Peels, Local Honey, Butter, Glucose, Dextrose, Sorbitol.


2018 SUACCI PINOT NOIR

On the nose you will find black tea, cedar and forest with rich cherry cola, and blackberry cobbler notes. The palate brings dark black fruit tones, Asian spice, white pepper and cherry pie flavors that linger for a long silky finish. This wine will age beautifully for years to come.

2018 BACIGALUPI PINOT NOIR

low sugar accumulation helped to lead to ripe fruit, full of complexity and vibrant flavors. On the nose, you'll notice subtle notes of clove, incense, allspice, black fruits, and cherry pie. The palate offers flavors of black raspberry, dried rose petals, and savory spices which lead to a long, dry finish with a rustic twist.

2019 ALEGRIA VINEYARD ZINFANDEL

This beautifully balanced wine exudes a pretty bouquet of floral tones with dried rose petals, lavender, and cherry blossoms leading the way to raspberry, cherry, cedar box, and leather aromas. The palate delights with flavors with plum and blackberry fruits dominating upfront, followed by middle notes of spice and hazelnut. A long finish echoes the spice and brings cherry pie and raspberry bramble. This wine can be enjoyed or in the next 10-15 years as it continues to beautifully age.
